BackOff is a free utility for both PC and Mac which enabling you to Speed Up the Sync of your iPhone or iPod Touch by turning off the automatic backup in iTunes. When automatic backup is on, storage of large amounts of data can seriously lengthen iTunes sync. You can easily disable iTunes Auto-Backup feature with BackOff and speed up your sync.

Please note that since you are turning off back up, no data from your phone will be backed up.
I don’t do anything specifically different to stop automatic backup. I backup my ipod when I feel there is a need and simply click the x to stop the backup and proceed on to the sync. I do however keep my iPod in manually manage mode and turn off automatic syncing in the preferences. Also, I don’t let Apple Mobile Device support or iPod Helper run all the time. I have two batch files. One to start the services with “net start (Service Name)” and one to stop the services with “net stop (Service Name)”.
